A simple and quick vegan Quinoa salad

I was at a birthday party last night and I prepared a delicious Quinoa salad and everybody asked me for the recipe (unfortunately the photo is not great, but I will post a new one when I make it again), so here it is:


  1. 2 cups of cooked quinoa, cold
  2. 1 big raw beetroot, grated
  3. 1 big carrot grated
  4. 1 tomato, diced
  5. 1 cucumber, diced
  6. plenty of cilantro, finely chopped
  7. handful of shallots or chives finely chopped
  8. 1 avocado sliced
  9. 1 orange
  10. ginger (as much as you like), grated


  1. plenty of olive oil
  2. plenty of lemon juice
  3. half a lemon zest
  4. Black pepper
  5. Himalayan salt
  6. Chilli flakes (optional)

Preparation time: 15-20 minutes

By the time the quinoa is ready, grate or chop your vegetables into a bowl. You may run cold water and strain the quinoa and then add it to the vegetables but it would be better if the quinoa is cooled down naturally so that you avoid excessive water in your salad.
